Many soft cheeses, including gourmet and artisan cheese, are at risk from Listeria and Salmonella contamination. The pathogen has been passed into the unpasteurized milk from the producing ruminant animal. Once the pathogens are in the milk, they thrive and multiply, well into the process of cheese production. Also, many toxic molds can be found on unpasteurized cheese. Amalfi Ingredients has products that are developed to prevent Salmonella and Listeria on cheese, and mold inhibitors to prevent the expansion of food-damaging fungus.
