PROPYL GALLATE
Propyl Gallate is the common name
for the antioxidant n-Propyl 3,4,5 Trihydroxybenzoate. It is used for the
preservation of fats and oils and is approved for food use by FDA in CFR 21
184.1660. Synergism between Propyl Gallate and BHA, Ascorbyl Palmitate, TBHQ,
and other common antioxidants, provides greater combined potency than the
contribution of each individual antioxidant.
Propyl Gallate is susceptible to
discoloration in the presence of iron or copper because it forms a highly
colored complex with these metals ions. Because of this susceptibility, citric
acid is often added to Propyl Gallate and its blends, to form the citric acid
metal ion complex instead, thereby reducing discoloration.
Propyl Gallate is, therefore, used
as a component in antioxidant blends applier where color stability is not a
problem and where the product containing in will not contact cast iron or
copper.
